Crème Brûlée with Lavender
Lavender crème brûlée is a delicate, fragrant dessert, where the sweetness of cream meets the floral notes of lavender.

Serves 4 to 6 guests
Ingredients:
- Full cream: 40 cl (13.6 oz or 1.7 cup)
- ½ skimmed milk: 40 cl (13.6 oz or 1.7 cup)
- Powdered sugar: 100 g.
- Brown sugar: 50 g.
- Egg yolks: 8
- Dried lavender flower: 15 g.
Cooking:
- Cooking time: Oven at 130°C ( 270° F) for 45 minutes - Preheat oven beforehand.
Steps:
- Bring the cream, milk and lavender flowers to the boil in a saucepan.
- In a bowl, mix the egg yolks with the caster sugar until the mixture whitens.
- Pour over the strained cream/milk, mix well and fill the container .
- Place in a hot oven at half-height for 45 minutes.
- Leave to cool. Just before serving, sprinkle with brown sugar and caramelize with a blowtorch.
- Tip: you can replace the lavender flowers with fresh thyme, accompanied by a few crushed raspberries blended with a dash of lemon juice.
