Crème Brûlée with Lavender

Lavender crème brûlée is a delicate, fragrant dessert, where the sweetness of cream meets the floral notes of lavender.

A Provence touch for a unique delicacy.

  • Serves 4 to 6 guests

Ingredients:

  • Full cream: 40 cl (13.6 oz or 1.7 cup)
  • ½ skimmed milk: 40 cl (13.6 oz or 1.7 cup)
  • Powdered sugar: 100 g.
  • Brown sugar: 50 g.
  • Egg yolks: 8
  • Dried lavender flower: 15 g.

Cooking:

  • Cooking time: Oven at 130°C ( 270° F) for 45 minutes - Preheat oven beforehand.

Steps:

  1. Bring the cream, milk and lavender flowers to the boil in a saucepan.
  2. In a bowl, mix the egg yolks with the caster sugar until the mixture whitens.
  3. Pour over the strained cream/milk, mix well and fill the container .
  4. Place in a hot oven at half-height for 45 minutes.
  5. Leave to cool. Just before serving, sprinkle with brown sugar and caramelize with a blowtorch.
  • Tip: you can replace the lavender flowers with fresh thyme, accompanied by a few crushed raspberries blended with a dash of lemon juice.
