With Réserve de Normandie, Paresse Paris celebrates the slow rhythm of the orchard and the work of Marc-Antoine, who brought his grandparents’ family orchard back to life.
In Normandy, two hundred tall apple trees surround the property, cultivated through responsible farming and in tune with the seasons. Sheep maintain the pastures, hens roam freely in the warmer months, and the apples are transformed on site.
To create this apple balsamic, it takes seven liters of apple juice and one liter of cider vinegar, slowly reduced in a cauldron for nearly a month, until perfectly concentrated. Nothing more. Nothing unnecessary.
